Quick and Easy Cinnamon Coffee Cake

This is the quickest and easiest (and delicious-est) coffee cake. Like this is the one you throw together in a jiff for an impromptu friend visit. Or just because you suddenly have a hankering for cinnamon coffee cake.

All I’m saying is if you feel like treating yourself to a sweet treat this weekend—a warm, cinnamon-y slice of heaven to go with your Saturday or Sunday morning coffee—THIS is the thing to make.

Yeah, it’s a blurry photo, but it’s the best shot I had of what the topping looks like all mixed up. ¯\_(ツ)_/¯

This recipe can be easily cut in half and baked in an 8-inch square or 9-inch round layer cake pan. In fact, I doubled the original recipe because that little coffee cake just wasn’t enough for my family of six. I mean, not if we wanted to have leftovers (and we WANTED to have leftovers). I’ve also quartered the recipe and baked it in a bread loaf pan for a single/double person amount. (And just for you, I’ve included the half and quarter recipes below.)

It also bakes up BEAUTIFULLY with a gluten-free one-to-one baking flour.

Before.

I mean, this recipe is SO versatile and so utterly scrumptious, you may find yourself looking for each and every opportunity to make it. And who could blame you? With ribbons of rich, buttery-sweet cinnamon streusel sunken into the soft vanilla cake, there’s really never a reason not to make it.

This is all just to say, you’re welcome. <3
